We spent 4 days in Hong Kong just this June and it was awesome. Hong Kong is not cheap neither as expensive as Singapore.
Very important thing to remember when travelling to Hong Kong is to buy an Octopus card (they have a tourist option for this). This would make you're travel in HK smoother. You can buy this card at the airport near the exit at MTR counter.
After checking in with the immigration you have a choice either to take the airport express train which doesn't come cheap or take a bus to Tung Chung and ride the regular MTR there. The difference would be about HKD 20.
If you opt to take the bus going to Tung Chung, take the number 1 bus, end of the line for that bus is Tung Chung. From there just follow the crowd towards the City Gate Mall. There the MTR sign is obnoxiously everywhere you wouldn't miss it (it would be good to have a MTR line map with you all the time--available at the airport and at every station).
For Hostels there are several rooms offered aound Nathan Road.
Places to go:
Ten thousand Buddhas - take an MTR to Lo Wu and transfer to another MTR to Sha Tin. Just exit at Sha Tin station and ask for the Government building. Behind the building is the pathway going up to the temple.
Ngong Ping and Disneyland - to Ngong Ping Village (Big Buddha) you have two choices either take the cable (HKD) 200 car or bus (HKD 27). Both rides are availble at Tung Chung (City Gate Mall).
For Disneyland, Take any MTR going to Tung Chung and exit at Sunny Bay Station, There transfer to a train going to Disneyland (it has a mickey mouse window).
Ocean Park - I would recommend that you buy your ticket at their booth at Admiralty station (it's way more cheaper there). Take any MTR to Admiralty station and exit there. The buses going to Ocean Park are parked just outside the building.
Victoria's Peak - If you stay at Hong Kong island then just ride the tram at central going to the peak (HKD 28), or take a bus at Pier 9 at Central and take the #15 bus (end of the line for this bus is the peak).
Food:
Cafe de Coral would be a good start.
There are a lot of food around Nathan Road, Mongkok, and Central.
